Shea’s Chocolate Chip Bourbon Pecan Pie
2 cups pecans
3 large eggs
¾ cup brown sugar
2/3 cup corn syrup
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
1 ounce of Bourbon
½ teaspoon salt
¾ cup semisweet chocolate chips
Preheat Oven to 375˚. Toast pecan on baking sheet for about 5 minutes or until fragrant. Coarsely chop.
Whisk eggs, brown sugar, corn syrup, vanilla, melted butter, Bourbon and salt until blended. Stir in pecans and chocolate chips into bowl.
Pour filling into pie shell. Cover outside crust with aluminum foil. Bake for 55 minutes or until center is set. Cool 1 hour before serving.
